Executive Chef Joshua Smith
Las Vegas native Joshua Smith boasts an esteemed resume, having worked at some of the top restaurants in the country. His culinary roots started in restaurants such as Las Vegas-local Rosemary’s, Le Cirque at the Bellagio and Alize at The Palms, working for Michelin-Starred Chef Andre Rochat.
In 2005, Smith furthered his expertise in cooking fresh fish and seafood as Sous Chef at Michael Mina’s Seablue at MGM Grand in Las Vegas. This was a pivotal role for Smith as he quickly rose to the Executive Chef position, the youngest chef to hold this title within the award-winning Mina Group.
A move to Chicago led Smith to Lettuce Entertain You and their Michelin-Starred restaurant L20, working alongside Matt Kirkley. Before its closing, L20 was considered one of the top restaurants in Chicago and the country.
In 2014, Smith came back to Las Vegas to rejoin forces with The Mina Group where he worked alongside Chef Mina to develop the concept and menu at the group’s new restaurant, Bardot Brasserie at the Aria Resort. During Smith’s time as Executive Chef, the restaurant was included on the World’s 50 Best Discovery list in 2018 and 2019.
In 2021, Smith joined the opening team at Delilah at Wynn, where he spent the next four years as Executive Chef of the renowned supper club. Delilah quickly grew to become one of the most sought-after reservations in the city.
